The Process of
Cachaça
The production process of the Sete Engenhos cachaças brings together sustainability and technical expertise.
Only water and sugarcane go in. There are no added preservatives or similar ingredients. The distillation is made in copper alembic stills, so that the cachaça comes exclusively from the “heart”.
The “head” (10% of upper end) and the “tail” (10% of the lower end) are thrown away; they are responsible for the well-known “hangover”.
These 20% are turned into ethanol.
